6. Eggnog Rum

Ingredients:

1 cup of milk

1 1/2 cups of half and half or heavy cream

1/2 cup Sugar Free Eggnog Syrup

3 egg yolks

1/4 cup of rum (or to taste)

Cinnamon powder and cinnamon sticks for garnish

Instructions:

In a large bowl, whisk together the egg yolks until they become slightly frothy. Gradually add in the Sugar Free Eggnog Syrup, continuing to whisk until well combined.

In a medium saucepan over medium heat, combine the milk and half and half (or heavy cream). Heat until it's hot, but not boiling. Slowly pour the hot milk mixture into the egg yolk mixture, whisking continuously to prevent the eggs from scrambling.

Once fully combined, pour the mixture back into the saucepan and return to medium heat. Cook, stirring constantly, until the mixture thickens slightly and coats the back of a spoon (about 160 degrees F if you have a thermometer).

Remove from heat and stir in the rum. Let the eggnog cool for a bit before transferring to a pitcher or jug. Refrigerate until chilled.

Serve cold, add cinnamon sticks, and enjoy responsibly!
